- 4 cups vegetable broth
- 2 cups bok choy (chopped)
- 1 cup shiitake mushrooms (sliced)
- 1 cup tofu (cubed)
- 1 small carrot (sliced)
- 2 cloves garlic (minced)
- 1 inch ginger (grated)
- 3 tablespoons miso paste (white or yellow)
- 1 tablespoon soy sauce (optional)
- 2 teaspoons sesame oil
- 2 tablespoons green onions (chopped)
- 1 tablespoon sesame seeds (toasted)
Instructions
- In a saucepan, bring the vegetable broth to a simmer over medium heat.
- Add the garlic, ginger, and sliced carrots. Cook for about 5 minutes.
- Stir in the bok choy and shiitake mushrooms. Cook for another 5 minutes until the vegetables are tender.
- In a small bowl, mix the miso paste with a ladle of hot broth until smooth, then stir it back into the soup.
- Add the cubed tofu and soy sauce, and heat through for another 2-3 minutes.
- Ladle the soup into bowls and drizzle with sesame oil. Garnish with green onions and sesame seeds.
Notes
- This soup can be customized with any seasonal vegetables you have on hand.
- Adjust the amount of miso to taste for desired saltiness.
