Description

A delightful blueberry cobbler made with fresh blueberries and a buttery topping.


Ingredients

Scale
  • 2 cups Fresh Blueberries
  • 2 Fresh Lemons (zest and juice)
  • 1 cup All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1/2 cup Unsalted Butter (melted)
  • 1/2 cup Whole Milk
  • 2 teaspoons Baking Powder
  • 1 tablespoon Cornstarch
  • Pinch of Salt
  • Coarse turbinado sugar (for sprinkling on top, optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 or 9×9-inch baking dish.
  2. In a medium bowl, combine the blueberries, granulated sugar, lemon zest, fresh lemon juice, and cornstarch. Toss until the blueberries are evenly coated and pour the mixture into the prepared baking dish.
  3. In a separate larger mixing bowl, whisk together the all-purpose flour, remaining granulated sugar, baking powder, and a pinch of salt until well combined.
  4. Create a well in the center of the dry ingredients and pour in the cooled melted butter and whole milk. Mix gently until just combined, being careful not to overmix.
  5. Pour the cobbler batter evenly over the blueberry mixture in the baking dish without stirring.
  6. Bake for 35-45 minutes, or until the topping is golden brown and a toothpick inserted comes out clean.
  7. Let the cobbler cool on a wire rack for at least 15-20 minutes before serving.
