Description

Delicious zucchini halves stuffed with a savory shrimp mixture and topped with mozzarella cheese.


Ingredients

Scale
  • 4 medium zucchinis
  • 1 lb large shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley or basil, chopped
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Halve each zucchini lengthwise and scoop out some flesh, leaving about half an inch.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  4. Add shrimp to the skillet and cook until pink, about 3-4 minutes.
  5. Stir in the scooped zucchini flesh, herbs, paprika, salt, and pepper; cook for an additional 2-3 minutes.
  6. Generously fill each zucchini half with the shrimp mixture and top with mozzarella cheese.
  7. Place stuffed zucchinis on a baking sheet and bake for 15-20 minutes or until golden brown.
