Description

Deliciously sweet and savory roasted carrots glazed with honey and herbs, perfect as a side dish.

Ingredients

Scale
  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
  2. Prepare the Carrots:
Peel the carrots and cut them into uniform sticks for even cooking.
  3. Mix the Glaze:
In a large mixing bowl, combine honey, olive oil, minced garlic, balsamic vinegar (optional), salt, and pepper. Mix well.
  4. Coat the Carrots:
Add the carrot sticks into the bowl and toss them until they are well coated with the honey mixture.
  5. Roast the Carrots:
Spread the coated carrots evenly on a baking sheet lined with parchment paper.
Sprinkle fresh thyme leaves over the carrots.
  6. Cooking:
Roast the carrots in the preheated oven for 25-30 minutes or until they are tender and lightly caramelized. Turn them halfway through the cooking time for even roasting.
  7. Serve:
Remove the carrots from the oven and transfer them to a serving dish.
Garnish with fresh parsley and additional thyme if desired.
Adjust seasoning with more salt and pepper if necessary.

Notes

  • For extra flavor, add a pinch of cayenne pepper for heat or a splash of lemon juice for acidity before serving.
  • Ensure carrots are spread in a single layer on the baking sheet to ensure even roasting and caramelization.
  • For a nutty crunch, sprinkle toasted almonds or pecans over the carrots before serving.
