Shrimp and Pasta Dish

Description

A delicious shrimp pasta dish that combines fresh ingredients and is easy to prepare.


Ingredients

Scale
  • 1 pound large peeled and deveined shrimp (cut crosswise into plump, bite-size pieces)
  • 1/4 cup olive oil (plus more for serving)
  • 1 pound spaghetti, fettuccine or linguine
  • 12 scallions (about 2 large bunches, trimmed and thinly sliced)
  • 2 10-ounce packages cherry tomatoes
  • salt and pepper (to taste)

Instructions

  1. Bring a large pot of salted water to a boil. Season the shrimp with salt and pepper.
  2. Cook the pasta in the boiling water according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  3. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook until pink and just cooked through, about 2 to 3 minutes per side. Remove and set aside.
  4. In the same skillet, add the scallions and cherry tomatoes. Cook until the tomatoes begin to burst, about 5 minutes.
  5. Add the drained pasta, shrimp, and reserved pasta water to the skillet. Toss everything together until well combined and the sauce coats the pasta.
  6. Serve with a drizzle of olive oil, and season with salt and pepper to taste.

  • This dish is best served fresh with a sprinkle of fresh herbs if desired.
