Description

A delightful and refreshing dessert featuring a soft sponge cake filled with a tangy lemon cream filling.

Ingredients

Scale
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting
  • 1 cup heavy cream
  • 1 cup lemon curd
  • 1 tablespoon lemon zest

Instructions

  1. Preheat Oven:
Preheat your oven to 350°F (175°C).
  2. Prepare Baking Sheet:
Line a 10×15-inch jelly roll pan with parchment paper, and lightly grease it.
  3. Make the Sponge Cake:
In a large bowl, whisk the eggs and granulated sugar until thick and pale.
Add vanilla extract and mix well.
Sift together flour, baking powder, and salt. Gently fold these dry ingredients into the egg mixture until combined.
  4. Bake the Sponge:
Spread the batter evenly in the prepared pan.
Bake for about 10-12 minutes, or until the cake is lightly golden and springs back when touched.
  5. Roll the Cake:
Once baked, dust the top with powdered sugar.
Place a clean kitchen towel over the cake, and carefully flip it onto the towel. Remove the parchment paper.
Roll the cake with the towel, starting from a short end, and let it cool completely.
  6. Prepare Lemon Cream Filling:
In a bowl, whip the heavy cream until soft peaks form.
Fold in the lemon curd and lemon zest until well combined and smooth.
  7. Assemble the Swiss Roll:
Once the cake is cool, unroll it gently.
Spread an even layer of the lemon cream filling over the surface.
Carefully roll the cake back up without the towel.
  8. Chill:
Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour before serving.
  9. Serve:
Trim the ends for a neat finish.
Slice and serve, dusting with additional powdered sugar if desired.

Notes

  • For a sharper lemon flavor, add a bit more lemon zest to the filling.
  • Ensure the roll is tight when rolling back for a professional look.
  • Keep the cake wrapped and chilled for easier slicing.
  • Substitute the lemon curd with your favorite citrus curd for a different flavor variation.
