A rich and cheesy corn casserole baked to perfection with a crunchy golden topping.
Ingredients

- 3 cups corn kernels (fresh, frozen, or canned)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 2 large eggs
- ½ cup milk
- ½ cup mayonnaise
- ½ cup crushed Ritz crackers or breadcrumbs
- 3 tbsp melted butter
- ½ tsp garlic powder
- ½ tsp black pepper
Instructions
- Preheat oven to 350°F and grease a 9×13 baking dish.
- In a bowl, whisk eggs, sour cream, milk, mayonnaise, garlic powder, and pepper.
- Stir in corn and half of the shredded cheddar.
- Pour mixture into baking dish and spread evenly.
- Top with remaining cheese.
- Mix crushed crackers with melted butter and sprinkle over casserole.
- Bake for 35–40 minutes until bubbly with a golden topping. Serve warm.
Notes
- Can use fresh, frozen, or canned corn kernels.
- For a spicier version, add diced jalapeños.
- Leftovers can be stored in the refrigerator for up to 3 days.
