Description

A rich and cheesy corn casserole baked to perfection with a crunchy golden topping.


Ingredients

Scale
  • 3 cups corn kernels (fresh, frozen, or canned)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • ½ cup milk
  • ½ cup mayonnaise
  • ½ cup crushed Ritz crackers or breadcrumbs
  • 3 tbsp melted butter
  • ½ tsp garlic powder
  • ½ tsp black pepper

Instructions

  1. Preheat oven to 350°F and grease a 9×13 baking dish.
  2. In a bowl, whisk eggs, sour cream, milk, mayonnaise, garlic powder, and pepper.
  3. Stir in corn and half of the shredded cheddar.
  4. Pour mixture into baking dish and spread evenly.
  5. Top with remaining cheese.
  6. Mix crushed crackers with melted butter and sprinkle over casserole.
  7. Bake for 35–40 minutes until bubbly with a golden topping. Serve warm.

Notes

  • Can use fresh, frozen, or canned corn kernels.
  • For a spicier version, add diced jalapeños.
