A creamy chicken and veggie filling baked under a golden mashed potato crust.
Ingredients

- 2 cups cooked chicken, shredded
- 4 cups mashed potatoes
- 2 cups mixed vegetables (peas, corn, carrots)
- 1 cup chicken broth
- 1 cup milk
- 3 tbsp butter
- 3 tbsp flour
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F.
- In a saucepan, melt butter, whisk in flour, and slowly add chicken broth and milk until creamy.
- Stir in chicken, mixed vegetables, garlic powder, onion powder, and pepper.
- Spread filling into a greased baking dish.
- Spoon mashed potatoes over top, smoothing or creating ridges with a fork.
- Bake for 25–30 minutes until potatoes are golden.
- Garnish with parsley and serve warm.
Notes
- Ensure the chicken is fully cooked before shredding.
- You can use leftover chicken or rotisserie chicken for convenience.
- Feel free to customize the mixed vegetables to your preference.
