White Chocolate Macadamia Nut Cookies

Description

Deliciously soft and chewy cookies packed with white chocolate chips and crunchy macadamia nuts.


Ingredients

Scale
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla
  • 1 1/4 cups white chocolate chips (plus some extra for the top)
  • 1 cup macadamia nuts, chopped

Instructions

  1. Preheat oven to 350 degrees, line a baking sheet with parchment paper.
  2. In a medium bowl add the flour, baking soda, and salt and mix.
  3. In a large bowl add the butter, brown sugar, and granulated sugar, and mix until creamy.
  4. Add in the eggs and vanilla and mix just until combined.
  5. Mix in the dry ingredients just until combined.
  6. Using a spatula or wooden spoon, fold in the chocolate chips and macadamia nuts.
  7. Refrigerate the cookie dough for 2 hours.
  8. Using a 2-tablespoon cookie scoop, place scoops on the baking sheets, and add a few more white chocolate chips on top.
  9. Bake for 9-10 minutes, cookies will continue to cook as they cool.

Notes

  • For best results, refrigerate dough before baking to prevent cookies from spreading too much.
  • These cookies are delicious warm out of the oven or at room temperature.
