A quick and easy creamy chicken lasagna made in one skillet.

- 2 tablespoons oil
- 2 boneless skinless chicken breasts, cubed
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2½ cups low sodium chicken broth
- 1 cup heavy cream
- 10 lasagna noodles, broken (about 250 grams)
- 1½ cups shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
Instructions
- Add 2 tablespoons of oil to a large skillet and heat over medium heat until shimmering, preparing the pan for cooking chicken.
- Add the cubed chicken breasts to the skillet and season with salt and black pepper. Cook for 3 to 5 minutes, turning occasionally, until the chicken pieces are lightly browned on all sides but not fully cooked through.
- Stir in minced garlic and Italian seasoning along with an additional pinch of salt and pepper. Cook for about 1 minute until fragrant, making sure not to burn the garlic.
- Pour in 2½ cups of low sodium chicken broth, using a wooden spoon to scrape up any browned bits stuck to the bottom of the skillet to incorporate added flavor.
- Stir in 1 cup of heavy cream and bring the mixture to a gentle simmer over medium-high heat, combining the ingredients for the creamy sauce base.
- Stir in the broken lasagna noodles, then return the mixture to a simmer. Reduce the heat to medium-low, cover the skillet, and cook for 10 to 15 minutes until the noodles are tender but still slightly firm (al dente).
- If the sauce is thinner than desired once the noodles are cooked, mix 1 tablespoon water with 1 tablespoon cornstarch and stir into the simmering sauce until it thickens to your liking.
- Sprinkle 1½ cups shredded mozzarella cheese and 2 tablespoons grated Parmesan evenly over the top. Cover the skillet to allow the cheese to melt, or place under a broiler briefly until the cheese is bubbly and golden brown.
- Remove from heat and serve the skillet lasagna hot, enjoying the creamy layers of chicken, pasta, and cheese all in one skillet.
