Description

Delicious and visually stunning purple Swiss roll cake filled with whipped cream and decorated with sprinkles.


Ingredients

  • 4 large eggs, separated
  • 100g granulated sugar
  • 1 teaspoon vanilla extract
  • 80g cake flour
  • 10g cornstarch
  • 1/4 teaspoon salt
  • as needed purple gel food coloring
  • 200ml heavy cream
  • 30g powdered sugar
  • 1 teaspoon vanilla extract
  • as needed assorted sprinkles for decoration

Instructions

  1. Prepare the Cake Batter:
    • Preheat your oven to 180°C (350°F). Line a 9×13 inch baking tray with parchment paper.
    • In a clean bowl, beat egg whites until soft peaks form. Gradually add half of the sugar (50g) and continue to beat until stiff peaks form.
    • In another bowl, beat egg yolks and remaining sugar until pale and creamy. Stir in vanilla extract.
    • Sift together cake flour, cornstarch, and salt. Gently fold into the egg yolk mixture.
    • Add a few drops of purple gel food coloring to the desired hue. Mix well.
    • Gently fold in the beaten egg whites in thirds, taking care not to deflate the mixture.
  2. Bake the Cake:
    • Pour the batter into the prepared baking tray and spread evenly.
    • Bake for 10-12 minutes, or until the cake springs back when lightly pressed.
    • Once baked, quickly turn the cake onto a clean tea towel dusted with powdered sugar. Peel off the parchment paper. Starting from one end, roll the cake with the towel. Let it cool completely.
  3. Prepare the Filling:
    • Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  4. Assemble the Swiss Roll:
    • Once the cake is cool, gently unroll and spread an even layer of whipped cream. Re-roll the cake without the towel.
    • Cover the outside with a thin layer of remaining whipped cream.
  5. Decorate:
    • Decorate with assorted sprinkles.

Notes

  • Ensure egg whites are whipped to stiff peaks for the best texture.
  • Use gel food coloring to achieve a vibrant purple without altering the batter’s consistency.
  • Roll the cake while it’s warm to prevent cracking.
  • Chill the assembled cake for at least an hour before serving to set the shape.
