  • 1/4 cup chopped pecans (optional but tasty)
  • Coarse sugar for topping
  • Caramel drizzle (store-bought or homemade)

Instructions

  1. Beat butter and powdered sugar until light and fluffy.
  2. Mix in vanilla, then add flour and salt until a soft dough forms.
  3. Stir in toffee bits and pecans, then shape the dough into two logs. Wrap in plastic and chill for 2 hours.
  4. Slice cookies 1/4-inch thick and place on baking sheet. Sprinkle with coarse sugar.
  5. Bake at 350°F (175°C) for 10–12 mins till edges are lightly golden.
  6. Once cool, drizzle with caramel.
