- 1 cup (2 sticks) unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1 cup toffee bits (like Heath)
- 1/4 cup chopped pecans (optional but tasty)
- Coarse sugar for topping
- Caramel drizzle (store-bought or homemade)
Instructions
- Beat butter and powdered sugar until light and fluffy.
- Mix in vanilla, then add flour and salt until a soft dough forms.
- Stir in toffee bits and pecans, then shape the dough into two logs. Wrap in plastic and chill for 2 hours.
- Slice cookies 1/4-inch thick and place on baking sheet. Sprinkle with coarse sugar.
- Bake at 350°F (175°C) for 10–12 mins till edges are lightly golden.
- Once cool, drizzle with caramel.
Notes
- Chilling the dough helps the cookies hold their shape while baking.
- Feel free to substitute walnuts for pecans if you prefer.
