  • 2 lbs lamb shoulder, boneless
  • 3 tablespoons olive oil
  • 2 large onions, sliced
  • 4 cloves garlic, minced

  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 cup lemon juice
  • 1/2 cup chicken stock
  • 1/4 cup fresh parsley, chopped
  • 1 large cucumber, sliced
  • 2 large tomatoes, grilled or roasted, sliced
  • French fries, for serving

Instructions

  1. Marinate the Lamb: In a large bowl, combine olive oil, garlic, cumin, coriander, paprika, turmeric, cinnamon, black pepper, salt, and lemon juice. Mix well. Add the lamb shoulder and coat thoroughly with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
  2. Prepare the Onions: Preheat a slow cooker or a large ovenproof pot over medium heat. Add a bit of olive oil and sauté the sliced onions until they are soft and translucent.
  3. Slow Cook the Lamb: Place the marinated lamb on top of the onions. Pour chicken stock over the lamb. Cover and cook on low for 6-8 hours or until the lamb is tender and easily shredded.
  4. Shred the Lamb: Once cooked, remove the lamb from the pot and shred it using two forks. Return the shredded lamb to the pot to absorb the juices.
  5. Prepare the Plate: Serve the shredded lamb with cucumber slices, grilled tomatoes, and French fries. Garnish with freshly chopped parsley.
