A delicious breakfast casserole with ground sausage, cheese, and hash browns.

- 1 pound ground breakfast sausage
- 6 large eggs
- 2 cups shredded sharp cheddar cheese
- 1/2 cup milk or heavy cream
- 3 cups frozen hash browns (thawed)
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- Cooking spray or butter (for greasing the baking dish)
Instructions
- In a large skillet over medium heat, cook the sausage until browned and cooked through. Drain excess grease and set aside.
- If using, sauté onions and bell peppers in the same skillet until soft, about 3–4 minutes.
- In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper until smooth.
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Spread the thawed hash browns evenly in the dish, followed by sausage, sautéed veggies, and half the shredded cheese.
- Pour the egg mixture evenly over the top and gently press ingredients down with a spatula to soak.
- Sprinkle remaining cheese on top.
- Bake for 40–45 minutes until the center is set and the top is golden brown.
- Let rest for 10 minutes before slicing and serving.
- Garnish with parsley or green onions if desired.
Notes
- This casserole can be prepared the night before and refrigerated overnight.
- Feel free to add your favorite vegetables or spices to customize the casserole.
