- 1 small cauliflower head, sliced into steaks
- 1 cup cooked brown rice
- 1 ripe avocado, diced
- 1 cup kidney beans, cooked or canned
- 1 cup baby spinach
- 1 cup diced cucumber
- 2 tbsp hummus
- 1 tbsp olive oil
- ½ tsp paprika
- Salt, pepper & chili flakes to taste
- Pumpkin seeds for garnish
Instructions
- Preheat oven to 400°F and line a tray with parchment.
- Brush cauliflower slices with olive oil, sprinkle with paprika, salt, and pepper, and roast for 20–25 minutes until golden.
- In a bowl, layer spinach as the base.
- Add roasted cauliflower, brown rice, kidney beans, avocado, and cucumber in separate sections.
- Add a spoonful of hummus on the side.
- Sprinkle with chili flakes and pumpkin seeds for crunch.
- Serve warm or chilled for a nourishing plant-based meal.
