Description

A nourishing Roasted Cauliflower Power Bowl featuring creamy avocado and flavorful hummus, perfect for a healthy meal.


Ingredients

Scale
  • 1 small cauliflower head, sliced into steaks
  • 1 cup cooked brown rice
  • 1 ripe avocado, diced
  • 1 cup kidney beans, cooked or canned
  • 1 cup baby spinach
  • 1 cup diced cucumber
  • 2 tbsp hummus
  • 1 tbsp olive oil
  • ½ tsp paprika
  • Salt, pepper & chili flakes to taste
  • Pumpkin seeds for garnish

Instructions

  1. Preheat oven to 400°F and line a tray with parchment.
  2. Brush cauliflower slices with olive oil, sprinkle with paprika, salt, and pepper, and roast for 20–25 minutes until golden.
  3. In a bowl, layer spinach as the base.
  4. Add roasted cauliflower, brown rice, kidney beans, avocado, and cucumber in separate sections.
  5. Add a spoonful of hummus on the side.
  6. Sprinkle with chili flakes and pumpkin seeds for crunch.
  7. Serve warm or chilled for a nourishing plant-based meal.
