Description

Ingredients

  • 1 lb fresh shrimp (peeled and deveined)
  • 2 ripe avocados (cubed)
  • 1 cup cherry tomatoes (halved)
  • 3 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh cilantro (chopped)
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat dry.
  2. Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side until pink and opaque; remove from heat and let cool slightly.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. In a large mixing bowl, gently combine cooked shrimp, avocado cubes, cherry tomatoes, and cilantro. Pour dressing over the top.
  5. Toss gently to coat without mashing the avocado.
  6. Serve immediately and enjoy!
