Description
A refreshing and healthy shrimp avocado salad that is perfect for a light meal or appetizer.
Ingredients

- 1 lb fresh shrimp (peeled and deveined)
- 2 ripe avocados (cubed)
- 1 cup cherry tomatoes (halved)
- 3 tbsp lime juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh cilantro (chopped)
- Salt and pepper to taste
Instructions
- Rinse shrimp under cold water and pat dry.
- Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side until pink and opaque; remove from heat and let cool slightly.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- In a large mixing bowl, gently combine cooked shrimp, avocado cubes, cherry tomatoes, and cilantro. Pour dressing over the top.
- Toss gently to coat without mashing the avocado.
- Serve immediately and enjoy!
