Description

Delicious steak quesadillas with caramelized peppers and a spicy mayo dip.


Ingredients

Scale
  • 1 lb thinly sliced steak (ribeye or sirloin works best)
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 large onion, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 tsp garlic powder
  • 8 slices provolone cheese
  • 4 large flour tortillas
  • 1/4 cup mayo
  • 1 tbsp sriracha or hot sauce
  • 1 tsp lemon juice
  • Pinch of garlic powder

Instructions

  1. Heat olive oil in a large skillet. Sauté steak until just cooked, then remove.
  2. In the same pan, cook peppers and onions until soft and caramelized. Return steak to pan and season with salt, pepper, and garlic powder.
  3. Lay out tortillas. On half of each, layer 2 provolone slices and a generous scoop of steak mixture. Fold over.
  4. Cook quesadillas in a clean pan or griddle until crisp and golden on both sides, cheese melted.
  5. Whisk spicy mayo ingredients and serve on the side for dipping.

Notes

  • Feel free to customize with additional toppings like avocado or sour cream.
