Description
Delicious steak quesadillas with caramelized peppers and a spicy mayo dip.
Ingredients

- 1 lb thinly sliced steak (ribeye or sirloin works best)
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 large onion, sliced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 tsp garlic powder
- 8 slices provolone cheese
- 4 large flour tortillas
- 1/4 cup mayo
- 1 tbsp sriracha or hot sauce
- 1 tsp lemon juice
- Pinch of garlic powder
Instructions
- Heat olive oil in a large skillet. Sauté steak until just cooked, then remove.
- In the same pan, cook peppers and onions until soft and caramelized. Return steak to pan and season with salt, pepper, and garlic powder.
- Lay out tortillas. On half of each, layer 2 provolone slices and a generous scoop of steak mixture. Fold over.
- Cook quesadillas in a clean pan or griddle until crisp and golden on both sides, cheese melted.
- Whisk spicy mayo ingredients and serve on the side for dipping.
Notes
- Feel free to customize with additional toppings like avocado or sour cream.
- Use different types of cheese if preferred.
