Description
Delicious steak quesadillas with peppers and onions, served with a spicy mayo dipping sauce.
Ingredients

- 1 lb thinly sliced steak (ribeye or sirloin works best)
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 large onion, sliced
- 1 tbsp olive oil
- to taste Salt and pepper
- 1/2 tsp garlic powder
- 8 slices provolone cheese
- 4 large flour tortillas
- 1/4 cup mayo
- 1 tbsp sriracha or hot sauce
- 1 tsp lemon juice
- Pinch of garlic powder
Instructions
- Heat olive oil in a large skillet. Sauté steak until just cooked, then remove.
- In the same pan, cook peppers and onions until soft and caramelized. Return steak to the pan and season with salt, pepper, and garlic powder.
- Lay out tortillas. On half of each, layer 2 provolone slices and a generous scoop of the steak mixture. Fold over.
- Cook quesadillas in a clean pan or griddle until crisp and golden on both sides, cheese melted.
- Whisk spicy mayo ingredients and serve on the side for dipping.
Notes
- Feel free to adjust the level of spiciness in the mayo by adding more or less sriracha.
- For a vegetarian option, substitute the steak with grilled vegetables.
