Steak Quesadillas with Spicy Mayo

Description

Delicious steak quesadillas with peppers and onions, served with a spicy mayo dipping sauce.


Ingredients

Scale
  • 1 lb thinly sliced steak (ribeye or sirloin works best)
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 large onion, sliced
  • 1 tbsp olive oil
  • to taste Salt and pepper
  • 1/2 tsp garlic powder
  • 8 slices provolone cheese
  • 4 large flour tortillas
  • 1/4 cup mayo
  • 1 tbsp sriracha or hot sauce
  • 1 tsp lemon juice
  • Pinch of garlic powder

Instructions

  1. Heat olive oil in a large skillet. Sauté steak until just cooked, then remove.
  2. In the same pan, cook peppers and onions until soft and caramelized. Return steak to the pan and season with salt, pepper, and garlic powder.
  3. Lay out tortillas. On half of each, layer 2 provolone slices and a generous scoop of the steak mixture. Fold over.
  4. Cook quesadillas in a clean pan or griddle until crisp and golden on both sides, cheese melted.
  5. Whisk spicy mayo ingredients and serve on the side for dipping.

Notes

  • Feel free to adjust the level of spiciness in the mayo by adding more or less sriracha.
  • For a vegetarian option, substitute the steak with grilled vegetables.
