Description
Deliciously crunchy peanut butter treats made with Rice Chex and packed with flavor.
Ingredients

- 6 cups Rice Chex Cereal
- 1 cup Salted Peanuts (coarsely chopped)
- 1 cup Brown Sugar (packed)
- 1 cup Light Corn Syrup
- 1 cup Smooth Peanut Butter
- 1 teaspoon Vanilla Extract
- 1 teaspoon Salt (plus extra for sprinkling)
- 2 ounces Semisweet Baking Chocolate (melted)
Instructions
- Grease a 9×13-inch baking pan. Set aside.
- Add the cereal and peanuts to a large bowl. Toss to combine. Set aside.
- Stir brown sugar and corn syrup together in a medium saucepan.
- Bring to a boil over medium heat, stirring regularly.
- Once at a boil, cook for 1 minute, stirring the entire time.
- Remove from heat.
- Stir in the peanut butter, vanilla, and salt.
- Pour the peanut butter mixture over the cereal mixture.
- Carefully toss to coat (a silicone spatula works well for this).
- Pour the mixture into the prepared pan, gently pressing the mixture into the pan.
- Let cool to room temperature.
- Once the treats are at room temperature, drizzle with melted chocolate.
- Let the chocolate set up before cutting and serving.
Notes
- Store treats in an airtight container for up to a week.
- For extra flavor, add a sprinkle of sea salt on top of the chocolate before it sets.
