Description

Deliciously crunchy peanut butter treats made with Rice Chex and packed with flavor.


Ingredients

Scale
  • 6 cups Rice Chex Cereal
  • 1 cup Salted Peanuts (coarsely chopped)
  • 1 cup Brown Sugar (packed)
  • 1 cup Light Corn Syrup
  • 1 cup Smooth Peanut Butter
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Salt (plus extra for sprinkling)
  • 2 ounces Semisweet Baking Chocolate (melted)

Instructions

  1. Grease a 9×13-inch baking pan. Set aside.
  2. Add the cereal and peanuts to a large bowl. Toss to combine. Set aside.
  3. Stir brown sugar and corn syrup together in a medium saucepan.
  4. Bring to a boil over medium heat, stirring regularly.
  5. Once at a boil, cook for 1 minute, stirring the entire time.
  6. Remove from heat.
  7. Stir in the peanut butter, vanilla, and salt.
  8. Pour the peanut butter mixture over the cereal mixture.
  9. Carefully toss to coat (a silicone spatula works well for this).
  10. Pour the mixture into the prepared pan, gently pressing the mixture into the pan.
  11. Let cool to room temperature.
  12. Once the treats are at room temperature, drizzle with melted chocolate.
  13. Let the chocolate set up before cutting and serving.

Notes

  • Store treats in an airtight container for up to a week.
  • For extra flavor, add a sprinkle of sea salt on top of the chocolate before it sets.
