- 1 cup Arborio rice
- 1/2 cup champagne or white wine
- 1/4 cup Parmesan cheese
- 3 cups seafood or chicken broth (warmed)
- 2 tbsp butter
- 1 small shallot, finely diced
- 2 tbsp heavy cream
- 1 tbsp black caviar (for garnish)
- Chopped chives and microgreens for garnish
Instructions
- In a saucepan, sauté shallots in butter until soft.
- Add Arborio rice and toast for 1–2 minutes, then deglaze with champagne.
- Gradually add warm broth, one ladle at a time, stirring until rice is creamy.
- Stir in Parmesan cheese and heavy cream; season lightly with salt.
- Meanwhile, steam or broil lobster tails for 7–8 minutes until bright red and tender.
- Plate risotto in a shallow bowl, top with lobster tail, and finish with caviar, chives, and microgreens.

- Ensure the broth is warm to help the rice cook evenly.
- For a richer flavor, use homemade seafood broth.
