Instructions
- Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and sugar together until light and fluffy.
- Mix in the egg, lemon zest, lemon juice, and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Gently fold in the diced strawberries, being careful not to crush them.
- Using a tablespoon or cookie scoop, portion the dough and roll each into a ball. Roll each ball in granulated sugar before placing it on the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes. Transfer them to a wire rack to cool completely.
