Instructions

  1. Prepare the Crust:
    • Crush the iced animal cookies into fine crumbs.

    • Press the mixture firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
  2. Make the Filling:

    • Melt the pink candy melts according to package instructions. Allow to cool slightly, then add to the cream cheese mixture and blend until smooth.
    • In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream gently into the cream cheese mixture until fully combined.
  3. Assemble the Cheesecake:
    • Pour the filling over the prepared crust and smooth the top with a spatula.
    • Decorate with additional iced animal cookies and rainbow sprinkles as desired.
  4. Chill:
    • Refrigerate the cheesecake for at least 4 hours, or until set. Overnight is best for a firmer texture.
  5. Serve:
    • Run a knife around the thin edge of the pan before releasing the springform.
