Ingredients

  • 1 cup white beans (cooked or canned)
  • 1 cup kidney beans (cooked or canned)
  • 1 ½ cups mushrooms, sliced
  • 1 cup crushed tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • 2 tbsp olive oil
  • Salt, pepper, and chopped parsley for garnish

Instructions

  1. Heat olive oil in a pot and sauté onions until soft.
  2. Add garlic and mushrooms, cooking until lightly browned.
  3. Stir in smoked paprika, thyme, salt, and pepper.
  4. Add crushed tomatoes and both types of beans; mix well.
  5. Simmer on low heat for 20–25 minutes until thick and flavorful.
  6. Garnish with chopped parsley and serve warm with bread or rice.
