Ingredients

- 1 cup white beans (cooked or canned)
- 1 cup kidney beans (cooked or canned)
- 1 ½ cups mushrooms, sliced
- 1 cup crushed tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp thyme
- 2 tbsp olive oil
- Salt, pepper, and chopped parsley for garnish
Instructions
- Heat olive oil in a pot and sauté onions until soft.
- Add garlic and mushrooms, cooking until lightly browned.
- Stir in smoked paprika, thyme, salt, and pepper.
- Add crushed tomatoes and both types of beans; mix well.
- Simmer on low heat for 20–25 minutes until thick and flavorful.
- Garnish with chopped parsley and serve warm with bread or rice.
