Ingredients

- 3 cups tri-color rotini pasta (cooked and cooled)
- 1 cup cherry tomatoes
- 1 cup cucumber slices
- ½ cup mini mozzarella balls
- 2–3 large carrots (carved into pumpkin shapes)
- 2 tbsp olive oil
- 1 tbsp Italian dressing or vinaigrette
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Cook pasta until al dente, rinse with cold water, and let cool completely.
- Slice carrots into rounds and carve little jack-o’-lantern faces using a small knife.
- In a large bowl, combine pasta, tomatoes, cucumbers, and mozzarella.
- Add olive oil and dressing; toss gently to coat.
- Arrange jack-o’-lantern carrot slices on top for a festive touch.
- Season with salt, pepper, and fresh herbs.
- Chill before serving for the best flavor and texture.

- For a spicier kick, add some diced jalapeños or red pepper flakes.
