Description

Delicious homemade gingerbread cookies, perfect for the holiday season!


Ingredients

  • 2⅛ cups all-purpose flour (or 2 cups + 2 tablespoons)
  • 4 teaspoons ground ginger
  • 1½ teaspoons ground cinnamon
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon allspice
  • ⅛ teaspoon nutmeg
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 12 tablespoons butter ( sticks, softened)
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • ¼ cup molasses
  • ½ cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, allspice, nutmeg, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the butter and 1 cup granulated sugar until light and fluffy — about 2–3 minutes using a hand or stand mixer.
  4. Beat in the egg and molasses until fully combined. The mixture should be smooth and slightly glossy.
  5. Gradually mix the dry ingredients into the wet mixture. Stir until a soft, slightly sticky dough forms. Don’t overmix!
  6. Scoop the dough into 1-inch balls (a tablespoon-sized cookie scoop works great). Roll each ball in the ½ cup granulated sugar to coat.
  7. Place the sugared dough balls on the prepared baking sheet, leaving about 2 inches between each one to allow for spreading.
  8. Bake for 10–12 minutes, or until the edges are set and crackly but the centers still look slightly soft.
  9. For crispier cookies: Bake 12–13 minutes.
  10. For chewier centers: Stick to 10 minutes.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

  • For added flavor, consider adding lemon zest or a pinch of black pepper.
