Ingredients

  • 1 cup all-purpose flour
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract
  • Pinch of salt
  • 8 oz cream cheese, softened
  • ½ cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F and grease a 9×13 baking dish.
  2. In a bowl, whisk oil, sugars, eggs, and vanilla until smooth.
  3. Stir in flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Fold in grated carrots. Spread batter evenly into dish.
  5. Bake 25–28 minutes until golden and set. Cool completely.
  6. Beat cream cheese, butter, powdered sugar, and vanilla until fluffy.
  7. Spread frosting over cooled bars and decorate with sprinkles or designs if desired.
