Ingredients

- 1 ½ cups grated carrots
- 1 cup all-purpose flour
- ½ cup vegetable oil
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp vanilla extract
- Pinch of salt
- 8 oz cream cheese, softened
- ½ cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F and grease a 9×13 baking dish.
- In a bowl, whisk oil, sugars, eggs, and vanilla until smooth.
- Stir in flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Fold in grated carrots. Spread batter evenly into dish.
- Bake 25–28 minutes until golden and set. Cool completely.
- Beat cream cheese, butter, powdered sugar, and vanilla until fluffy.
- Spread frosting over cooled bars and decorate with sprinkles or designs if desired.
Notes
- Ensure the cream cheese and butter are at room temperature for easy mixing.
- Store leftovers in an airtight container in the refrigerator.
- These bars can be frozen for up to 3 months.
