Ingredients

- 1 cup all-purpose flour
- 1 tablespoon brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 3/4 cup pumpkin puree
- 1 large egg
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
- In another bowl, whisk together the pumpkin puree, brown sugar, egg, buttermilk, vanilla extract, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
- Preheat a skillet or griddle over medium heat and lightly grease it with butter or oil.
- Scoop 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface.
- Flip and cook for another 2 minutes or until golden brown and cooked through.
- Serve hot with your favorite toppings like maple syrup, whipped cream, or nuts.
Notes
- These pancakes can be made ahead of time and stored in the refrigerator.
- Reheat them in the toaster or microwave before serving.
