Description

Delicious homemade pretzels, soft and golden brown.

Ingredients

Scale
  • 4 cups all purpose flour
  • 1 1/2 cups water (warm)
  • 4 tsp sugar
  • 2 tsp salt
  • 3 tsp active dry yeast
  • 10 cups water
  • 2/3 cup baking soda
  • 2 large egg yolks (+ 2 tbsp water for wash)
  • 1/2 cup butter (melted)
  • 1 pinch sea salt

Instructions

  1. In a stand mixer fitted with a dough hook, stir together warm water, sugar, and salt until the sugar is dissolved. Sprinkle yeast over the top and allow to bloom for approx. 5 minutes.
  2. Add the flour to the stand mixer bowl and beat while adding butter in a slow drizzle. Beat with the dough hook on medium speed for 5 minutes or until a ball forms and the dough pulls together and away from the sides of the bowl.
  3. Grease a bowl with olive oil and transfer dough to the bowl. Cover with plastic wrap and rest in a warm place for 1 hour or until doubled in size.
  4. Preheat oven to 450 degrees. Prepare a baking sheet with parchment paper. Spritz with nonstick cooking spray or lightly grease with oil.
  5. In a large pot bring water and baking soda to a boil. Then, grease a cutting board lightly with oil. Divide dough into 8 to 10 equal pieces. Roll each piece into a rope about 24 inches long.
  6. Twist dough into pretzel shapes by creating a U. Then twist loose ends together and fold the twist back over to the middle of the U and press together.
  7. One at a time, drop pretzels into the boiling water and allow to boil for 30 seconds. Remove using a slotted turner and immediately place on the prepared baking sheet.
  8. Whisk together water and egg yolk in a bowl. Use a pastry brush to coat the pretzels and immediately sprinkle with kosher salt.
  9. Bake for 12 to 14 minutes or until the tops of pretzels are golden brown.
  10. Note: Pretzel bites cut into 1-inch pieces will take about 5 minutes in a preheated 350 degree oven.

Notes

  • Ensure water is warm, not hot, to activate yeast effectively.
  • You can create various flavors by adding toppings such as cheese or spices.
