Description
A delicious relish made with beetroot and apple for a unique flavor.
Ingredients

- 1/2 lb raw beetroot (peeled and shredded)
- 1 each apple (I used Granny Smith; no need to peel the apple)
- 1/2 each onion (minced)
- 2 tbsp apple cider vinegar
- 1/4 ts salt
- 1 inch ginger (minced)
- 1/8 ts cayenne
- 1/8 ts cloves (ground)
- 1 tbsp olive oil
Instructions
- Begin by peeling the beets using a vegetable peeler.
- Shred the beetroot and apple, and mince the onion and ginger. Use of a food processor with a shredder attachment is super helpful to shred the beet and apple quickly and easily.
- Combine all of the ingredients in a large saucepan or Dutch oven and stir to combine.
- Bring to a rolling boil on high heat, and then lower the heat to a low simmer and cover. Cook for around 30-40 minutes (or until the relish is tender), stirring every so often. If there is too much moisture, you can uncover the pan and cook off some of the moisture.
- Taste and add more salt if you desire. The relish should be sweet, but if it’s not sweet enough for you you can add a bit of sugar.
- Cool, place in an airtight container or glass jar, and chill before enjoying!
