Description

A delightful and rich layered cake with a peach filling and caramel drizzle.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups fresh peaches, peeled and sliced
  • 1/2 cup caramel sauce
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for the whipped cream)
  • Additional caramel sauce for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with milk. Mix until just blended.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then remove from pans and transfer to a wire rack to cool completely.
  9. In a medium bowl, toss the sliced peaches with a few tablespoons of caramel sauce. Set aside.
  10. In a large mixing bowl, beat the heavy cream until it begins to thicken.
  11. Add the powdered sugar and vanilla extract. Continue to beat until stiff peaks form.
  12. Place one cake layer on a serving platter. Spread a layer of whipped cream on top.
  13. Arrange half of the caramel-coated peach slices over the whipped cream.
  14. Place the second cake layer on top. Spread more whipped cream over the top layer and arrange the remaining peach slices.
  15. Drizzle additional caramel sauce over the top of the cake.
  16. Pipe whipped cream around the edges for decoration if desired.

Notes

  • For even more flavor, add a teaspoon of cinnamon to the peach filling.
  • Make sure the cake layers are completely cooled before assembling to prevent the whipped cream from melting.
  • Use ripe peaches for the best flavor and texture.
  • The cake can be refrigerated for up to two days; bring it to room temperature before serving for the best texture.
