A delightful and rich layered cake with a peach filling and caramel drizzle.

- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup milk
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups fresh peaches, peeled and sliced
- 1/2 cup caramel sauce
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for the whipped cream)
- Additional caramel sauce for drizzling
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In another bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the creamed mixture, alternating with milk. Mix until just blended.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then remove from pans and transfer to a wire rack to cool completely.
- In a medium bowl, toss the sliced peaches with a few tablespoons of caramel sauce. Set aside.
- In a large mixing bowl, beat the heavy cream until it begins to thicken.
- Add the powdered sugar and vanilla extract. Continue to beat until stiff peaks form.
- Place one cake layer on a serving platter. Spread a layer of whipped cream on top.
- Arrange half of the caramel-coated peach slices over the whipped cream.
- Place the second cake layer on top. Spread more whipped cream over the top layer and arrange the remaining peach slices.
- Drizzle additional caramel sauce over the top of the cake.
- Pipe whipped cream around the edges for decoration if desired.
Notes
- For even more flavor, add a teaspoon of cinnamon to the peach filling.
- Make sure the cake layers are completely cooled before assembling to prevent the whipped cream from melting.
- Use ripe peaches for the best flavor and texture.
- The cake can be refrigerated for up to two days; bring it to room temperature before serving for the best texture.
