A hearty slow cooker chili made with ground beef, beans, and spices for a bold flavor.

- 1 pound ground beef
- 1 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 green bell pepper, diced
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1/2 teaspoon ground chipotle
- 1/2 teaspoon cayenne pepper
- 1 tablespoon Worcestershire sauce
- 1 tablespoon liquid smoke
- 14 ounces kidney beans, drained and rinsed
- 28 ounces diced tomatoes, undrained
- 15 ounces tomato sauce
Instructions
- Heat a large skillet over medium heat. Add the ground beef and break it up with a spoon. Season with salt and black pepper. Cook until the beef starts to brown but does not need to be fully cooked through at this stage.
- To the skillet with beef, add the diced green bell pepper, diced yellow onion, and minced garlic. Cook for 4 to 5 minutes, stirring occasionally, until the beef is no longer pink and the vegetables begin to soften. Drain the fat from the skillet.
- Transfer the beef and vegetable mixture to the slow cooker. Add the chili powder, cumin, ground chipotle, cayenne pepper, Worcestershire sauce, liquid smoke, kidney beans, diced tomatoes with juice, and tomato sauce. Stir well to combine all ingredients thoroughly.
- Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours. This slow cooking allows the flavors to meld and the chili to thicken.
- Once cooked, serve the chili hot. Garnish with your choice of diced red onion, corn chips, sliced jalapenos, shredded cheese, sour cream, and fresh cilantro to add texture and enhance flavor.
Notes
- For added spice, increase the cayenne pepper.
