Description

Golden, pan-fried corn cakes with a tender inside and crunchy edges.


Ingredients

Scale
  • 2 cups fresh or frozen corn kernels
  • ½ cup all-purpose flour
  • 2 large eggs
  • ½ cup shredded cheddar cheese
  • 2 green onions, finely chopped
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & black pepper to taste
  • 2 tbsp olive oil (for frying)
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, mix corn, flour, eggs, cheese, green onions, garlic powder, paprika, salt, and pepper until combined.
  2. Heat olive oil in a skillet over medium heat.
  3. Drop spoonfuls of batter into the pan, flattening slightly with a spatula.
  4. Cook 2–3 minutes per side until golden brown and crispy.
  5. Remove and drain on paper towels.
  6. Garnish with parsley and serve warm.
