Description
Golden, pan-fried corn cakes with a tender inside and crunchy edges.
Ingredients

- 2 cups fresh or frozen corn kernels
- ½ cup all-purpose flour
- 2 large eggs
- ½ cup shredded cheddar cheese
- 2 green onions, finely chopped
- ½ tsp garlic powder
- ½ tsp paprika
- Salt & black pepper to taste
- 2 tbsp olive oil (for frying)
- Fresh parsley for garnish
Instructions
- In a large bowl, mix corn, flour, eggs, cheese, green onions, garlic powder, paprika, salt, and pepper until combined.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of batter into the pan, flattening slightly with a spatula.
- Cook 2–3 minutes per side until golden brown and crispy.
- Remove and drain on paper towels.
- Garnish with parsley and serve warm.
