Description

Deliciously crispy chicken cutlets stuffed with melted cheese and fresh herbs.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh parsley
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Prepare the Chicken: Butterfly each chicken breast by slicing horizontally without cutting all the way through. Place a mixture of mozzarella, cheddar, and parsley inside each chicken piece. Close the chicken breasts, securing the cheese inside. Use toothpicks if necessary.
  2. Set Up Breading Station: Place the flour in a shallow dish, season with salt and pepper. Beat the eggs in a second dish. In a third dish, combine Panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. Bread the Chicken: Dredge each stuffed chicken breast in flour, shaking off excess. Dip into the beaten eggs, then coat thoroughly with the breadcrumb mixture.
  4. Fry the Chicken: Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Add the chicken cutlets, cooking for 5-7 minutes on each side or until golden brown and cooked through.
  5. Drain and Serve: Remove the chicken to a paper towel-lined plate to drain excess oil. Remove any toothpicks before serving.

Notes

  • Ensure the oil is hot before adding chicken to achieve a crunchy texture.
  • Use a meat thermometer to ensure the internal temperature of the chicken reaches 165°F (74°C).
  • Experiment with different cheese blends for varied flavors.
  • Serve with lemon wedges or a dipping sauce like marinara or aioli for added flavor.
