- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1 tablespoon chopped fresh parsley
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup Panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Prepare the Chicken: Butterfly each chicken breast by slicing horizontally without cutting all the way through. Place a mixture of mozzarella, cheddar, and parsley inside each chicken piece. Close the chicken breasts, securing the cheese inside. Use toothpicks if necessary.
- Set Up Breading Station: Place the flour in a shallow dish, season with salt and pepper. Beat the eggs in a second dish. In a third dish, combine Panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Bread the Chicken: Dredge each stuffed chicken breast in flour, shaking off excess. Dip into the beaten eggs, then coat thoroughly with the breadcrumb mixture.
- Fry the Chicken: Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Add the chicken cutlets, cooking for 5-7 minutes on each side or until golden brown and cooked through.
- Drain and Serve: Remove the chicken to a paper towel-lined plate to drain excess oil. Remove any toothpicks before serving.
