Description

This delicious cranberry orange coffee cake is perfect for brunch or a sweet treat any time of day. It’s moist, flavorful, and topped with a sweet lemon glaze.


Ingredients

  • 1 cup butter (room temperature)
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons orange zest
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ½ cup buttermilk
  • 2 cups cranberries (fresh)
  • 2 tablespoons coarse sugar
  • 1 cup powdered sugar
  • 23 tablespoons lemon juice

Instructions

  1. Preheat oven to 350 degrees F.
  2. In the bowl of a stand mixer, add room temperature butter and sugar. Using the paddle attachment, beat until light and fluffy, about 3 minutes.
  3. Slowly add the egg, orange zest, and vanilla, mixing on low speed until smooth.
  4. Stop the mixer and add flour, baking powder, and salt; mix on low speed just until almost combined.
  5. Add the buttermilk and continue mixing on low until well mixed.
  6. Use a rubber spatula to carefully fold in the fresh cranberries by hand.
  7. Transfer the batter to a buttered 9″ x 9″ baking dish, using an offset spatula to spread evenly.
  8. Sprinkle about 2 tablespoons of coarse sugar over the cake batter just before baking.
  9. Bake in a preheated 350 degree oven for 45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove the cake from the oven and let cool completely on a cooling rack before slicing.
  11. In a small mixing bowl, add powdered sugar, then add 2 tablespoons of lemon juice and stir until combined.
  12. Add up to 1 more tablespoon of lemon juice until there is a ribbon-like drizzle that melts into the glaze when you lift your spoon.
  13. Drizzle lemon glaze over the top of the coffee cake and enjoy!

Notes

  • For a more intense lemon flavor, increase the lemon juice in the glaze.
  • This cake can be stored at room temperature for 2-3 days.
