- 1 lb raw shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Zest of 1 lime
- Juice of 1 lime
- ¼ cup fresh cilantro, chopped
- 8 small corn or flour tortillas
- Optional Toppings: Shredded cabbage or lettuce, diced tomatoes, sliced avocado, sour cream or plain yogurt, extra lime wedges
Instructions
- In a large bowl, combine olive oil, garlic, cumin, chili powder, paprika, salt, pepper, lime zest, and lime juice. Add the shrimp and toss until evenly coated.
- Heat a large skillet over medium-high heat. Add the shrimp in a single layer and cook for about 2–3 minutes per side, until pink and opaque. Stir in chopped cilantro during the last minute for maximum freshness.
- While the shrimp cook, warm tortillas in a dry pan or wrapped in a clean towel in the microwave.
- Spoon shrimp into each tortilla and top with cabbage, avocado, or your favorite toppings. Finish with a squeeze of fresh lime.
