Description

Delicious shrimp tacos with fresh ingredients and zesty lime.


Ingredients

  • 1 lb raw shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Zest of 1 lime
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • 8 small corn or flour tortillas
  • Optional Toppings: Shredded cabbage or lettuce, diced tomatoes, sliced avocado, sour cream or plain yogurt, extra lime wedges

Instructions

  1. In a large bowl, combine olive oil, garlic, cumin, chili powder, paprika, salt, pepper, lime zest, and lime juice. Add the shrimp and toss until evenly coated.
  2. Heat a large skillet over medium-high heat. Add the shrimp in a single layer and cook for about 2–3 minutes per side, until pink and opaque. Stir in chopped cilantro during the last minute for maximum freshness.
  3. While the shrimp cook, warm tortillas in a dry pan or wrapped in a clean towel in the microwave.
  4. Spoon shrimp into each tortilla and top with cabbage, avocado, or your favorite toppings. Finish with a squeeze of fresh lime.
