Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup strawberry puree
- Few drops of red food coloring (optional)
- 1/2 cup heavy cream
- 1/2 cup confectioners’ sugar
- 1/2 cup semi-sweet chocolate chips
- 1 tablespoon vegetable oil
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Mix Dry Ingredients: In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add Eggs: Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Combine Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with milk. Mix until just combined.
- Prepare Strawberry Batter: In another bowl, mix strawberry puree with a few drops of red food coloring if desired. Take half of the cupcake batter and gently fold in the strawberry mixture.
- Fill Liners: Spoon the chocolate batter and strawberry batter alternately into each cupcake liner, filling about 3/4 full. Use a toothpick to swirl the batters slightly.
- Bake: Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool on a wire rack.
- For the Frosting: In a chilled bowl, whip the heavy cream until soft peaks form. Gradually add confectioners’ sugar and whip until stiff peaks form.
- Frost Cupcakes: Pipe or spread the cream over cooled cupcakes.
- Chocolate Drizzle: Melt the chocolate chips with vegetable oil in a microwave-safe bowl, stirring every 30 seconds until smooth. Drizzle over the frosting on each cupcake.
Notes
- Make sure all ingredients are at room temperature before starting to ensure a smooth batter.
- You can use fresh or frozen strawberries to make the puree.
- Adjust the sweetness of the frosting according to your preference.
- Ensure cupcakes are completely cooled before frosting to prevent melting.
- For extra texture, consider adding chocolate shavings or sprinkles on top.
