  • 1 tablespoon vegetable oil

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add Eggs: Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Combine Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with milk. Mix until just combined.
  6. Prepare Strawberry Batter: In another bowl, mix strawberry puree with a few drops of red food coloring if desired. Take half of the cupcake batter and gently fold in the strawberry mixture.
  7. Fill Liners: Spoon the chocolate batter and strawberry batter alternately into each cupcake liner, filling about 3/4 full. Use a toothpick to swirl the batters slightly.
  8. Bake: Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool on a wire rack.
  9. Whip Cream: In a chilled bowl, whip the heavy cream until soft peaks form. Gradually add confectioners’ sugar and whip until stiff peaks form.
  10. Frost Cupcakes: Pipe or spread the cream over cooled cupcakes.
  11. Chocolate Drizzle: Melt the chocolate chips with vegetable oil in a microwave-safe bowl, stirring every 30 seconds until smooth. Drizzle over the frosting on each cupcake.
