A delicious and hearty casserole featuring ground beef, macaroni, and plenty of cheese.

- 1 lb lean ground beef
- 2 cups elbow macaroni (uncooked)
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 1 can (14 oz) diced tomatoes
- 2 cups shredded sharp cheddar cheese
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian herbs
- 1 cup low-sodium beef broth
- 1 cup pasta sauce
Instructions
- Preheat your oven to 350°F (175°C) and grease a large casserole dish.
- In a skillet over medium heat, sauté diced onions in oil until translucent (5 minutes). Add minced garlic and cook for an additional minute.
- Add ground beef to the skillet, browning it for about 7-10 minutes while breaking it apart.
- Stir in diced tomatoes and seasonings; let simmer for 5 minutes.
- In a large bowl, combine cooked elbow macaroni with the meat mixture, folding in shredded cheese and pasta sauce until evenly coated.
- Transfer to the prepared casserole dish, top with extra cheese if desired, cover with foil, and bake for 25 minutes. Remove foil and bake for another 10 minutes until bubbly and golden brown.
Notes
- For extra flavor, add chopped bell peppers or mushrooms to the meat mixture.
- This dish is great for leftovers and reheats well.
