Ingredients

  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • ½ cup melted butter
  • 1 box (8.5 oz) corn muffin mix (like Jiffy)
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • Chopped chives for garnish

Instructions

  1. Preheat oven to 350°F and grease a 9×13 baking dish.
  2. In a bowl, whisk eggs, sour cream, and melted butter until smooth.
  3. Stir in corn, muffin mix, garlic powder, pepper, and half the cheddar cheese.
  4. Pour mixture into baking dish and spread evenly.
  5. Top with remaining cheese.
  6. Bake 30–35 minutes until golden and bubbly.
  7. Garnish with fresh chives and serve hot.
