Description

These delicious chai spiced oatmeal cookies are soft, chewy, and packed with flavor!


Ingredients

  • 1 cup unsalted butter (room temperature)
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon chai spice blend
  • 3 cups old fashioned oats

Instructions

  1. In a large bowl, add butter, brown sugar, and granulated sugar. Using a hand mixer or stand mixer, beat until fluffy, about a minute.
  2. Add eggs and vanilla extract. Beat until fluffy, about a minute.
  3. In a separate bowl, sift together the flour, chai spices, baking soda, and salt. Gradually stir dry ingredients into butter mixture until just combined.
  4. Add old fashioned oats and stir until just combined. Dough will feel sticky.
  5. Cover bowl or wrap dough in wax paper. Chill for at least 1 hour (up to 24 hours) in the refrigerator.
  6. Preheat oven to 350℉. Line a baking sheet with parchment paper and set aside.
  7. Remove dough from refrigerator and scoop dough using a 1 tablespoon (medium) scoop or shape by hand into 1 inch balls.
  8. Place cookie dough balls 2 inches apart onto a prepared baking sheet.
  9. Bake for about 11-13 minutes, or until lightly browned around edges and across the tops. Allow to cool for 5 minutes before removing to a wire rack to cool completely.

Notes

  • Refrigerating helps the flavors meld and also creates a firmer, less sticky dough to roll into balls.
