A delicious and easy-to-make Caprese-inspired quesadilla perfect for a quick meal or snack.
Ingredients

- 4 large flour tortillas
- 8 oz fresh mozzarella, sliced
- 1–2 tomatoes, thinly sliced
- 1/4 cup basil pesto
- Fresh basil leaves
- Salt and pepper to taste
- Optional: balsamic glaze for drizzling
- Olive oil or butter for toasting
Instructions
- Spread pesto over half of each tortilla. Layer mozzarella, tomato slices, fresh basil, and a pinch of salt and pepper.
- Fold tortillas in half.
- Heat a nonstick skillet with a little oil or butter. Toast each quesadilla 2–3 minutes per side until golden and the cheese is melted.
- Slice into wedges and serve with a drizzle of balsamic glaze if desired.
Notes
- For a crispier quesadilla, use more oil or butter while toasting.
- Feel free to add other ingredients such as spinach or grilled chicken for added flavor.
