Description

A delicious and easy-to-make Caprese-inspired quesadilla perfect for a quick meal or snack.


Ingredients

  • 4 large flour tortillas
  • 8 oz fresh mozzarella, sliced
  • 12 tomatoes, thinly sliced
  • 1/4 cup basil pesto
  • Fresh basil leaves
  • Salt and pepper to taste
  • Optional: balsamic glaze for drizzling
  • Olive oil or butter for toasting

Instructions

  1. Spread pesto over half of each tortilla. Layer mozzarella, tomato slices, fresh basil, and a pinch of salt and pepper.
  2. Fold tortillas in half.
  3. Heat a nonstick skillet with a little oil or butter. Toast each quesadilla 2–3 minutes per side until golden and the cheese is melted.
  4. Slice into wedges and serve with a drizzle of balsamic glaze if desired.

Notes

  • For a crispier quesadilla, use more oil or butter while toasting.
