This delicious broccoli quiche is perfect for brunch or a light meal!

- 1 9-inch pie crust (store-bought or homemade; prebaked recommended)
- 1 ½ cups fresh broccoli florets, chopped (or 1 cup frozen, thawed & drained)
- 1 tbsp butter or olive oil
- ½ cup onion, finely diced (optional)
- 1 cup shredded cheddar cheese (Swiss or Gruyère also work beautifully)
- 4 large eggs
- 1 cup half-and-half (or ½ cup milk + ½ cup heavy cream)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder (optional)
- Pinch nutmeg (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Place the pie crust in a 9-inch pie dish.
- Prick the bottom with a fork, line with parchment, add pie weights.
- Bake for 10 minutes. Remove weights and bake for 5 minutes more.
- Steam or sauté broccoli just until tender—about 3–4 minutes.
- In a pan, melt butter and cook onions until soft (optional step).
- Spread broccoli and onions evenly across the prebaked crust.
- Sprinkle cheese on top.
- In a bowl, whisk together eggs, half-and-half, salt, pepper, garlic powder, and nutmeg.
- Reduce oven temperature to 350°F (175°C).
- Pour custard mixture over the filling.
- Bake for 35–40 minutes, or until the center is set but slightly jiggly.
- Let rest for 10 minutes before slicing.
Notes
- For a richer flavor, you can add cooked bacon or ham to the filling.
- Customize with your favorite vegetables or cheese.
