Description

A refreshing treat made with Greek yogurt and blueberries.


Ingredients

Scale
  • 1 cup Greek yogurt
  • 1/2 cup blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional)

Instructions

  1. In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for about 5 minutes until blueberries soften.
  2. If using cornstarch, dissolve in water and stir into blueberry mixture to thicken. Remove from heat and let cool.
  3. In a mixing bowl, combine Greek yogurt and vanilla extract. Whisk until smooth and creamy.
  4. Spoon yogurt mixture into molds, filling three-quarters full.
  5. Add cooled blueberry compote on top and swirl with a toothpick.
  6. Freeze molds for at least 3 hours until solid.
