Ingredients

  • 1 cup fresh cranberries
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 2 tablespoons olive oil

  • 1 teaspoon black pepper

  • 2 cloves garlic, minced
  • 1/4 cup chicken broth

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken: Season the chicken breasts with salt and black pepper on both sides.
  3. Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken breasts and sear for 3-4 minutes per side until golden brown. Remove from the skillet and set aside.
  4. Prepare the Glaze: In the same skillet, add minced garlic and sauté until fragrant. Add balsamic vinegar, honey, and chicken broth. Stir well and bring the mixture to a simmer.
  5. Add Cranberries and Thyme: Add fresh cranberries and thyme to the skillet, stirring gently to combine. Let the sauce cook for a few minutes until the cranberries begin to soften.
  6. Combine Chicken and Glaze: Return the seared chicken breasts to the skillet, spooning some of the glaze over the top.
  7. Bake in the Oven: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the glaze has thickened.
  8. Garnish and Serve: Remove from the oven, garnish with fresh thyme, and serve warm.

Notes

  • For a thicker glaze, you can reduce it longer on the stovetop before adding the chicken.
  • If fresh cranberries are not available, you can use frozen cranberries; just add a little extra cooking time for them to thaw.
