- 1 cup fresh cranberries
- 1/2 cup balsamic vinegar
- 1/4 cup honey

- 2 cloves garlic, minced
- 1/4 cup chicken broth
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Chicken: Season the chicken breasts with salt and black pepper on both sides.
- Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken breasts and sear for 3-4 minutes per side until golden brown. Remove from the skillet and set aside.
- Prepare the Glaze: In the same skillet, add minced garlic and sauté until fragrant. Add balsamic vinegar, honey, and chicken broth. Stir well and bring the mixture to a simmer.
- Add Cranberries and Thyme: Add fresh cranberries and thyme to the skillet, stirring gently to combine. Let the sauce cook for a few minutes until the cranberries begin to soften.
- Combine Chicken and Glaze: Return the seared chicken breasts to the skillet, spooning some of the glaze over the top.
- Bake in the Oven: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the glaze has thickened.
- Garnish and Serve: Remove from the oven, garnish with fresh thyme, and serve warm.
Notes
- For a thicker glaze, you can reduce it longer on the stovetop before adding the chicken.
- If fresh cranberries are not available, you can use frozen cranberries; just add a little extra cooking time for them to thaw.
- To add an extra layer of flavor, you can include a tablespoon of Dijon mustard in the glaze mixture.
