This delicious baked oatmeal combines rolled oats, fresh blueberries, and almond milk for a wholesome breakfast treat.

- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups almond milk (or your preferred milk)
- 1/4 cup maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries (or frozen)
- 1/2 cup sliced almonds (plus extra for topping)
- 1 teaspoon ground cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper or grease it with non-stick spray.
- In a large mixing bowl, whisk together the rolled oats, baking powder, salt, and ground cinnamon if using.
- In a separate bowl, combine the almond milk, maple syrup, and vanilla extract. Whisk until well blended.
- Pour the wet mixture into the dry ingredients, stirring until everything is nicely incorporated. Fold in the blueberries and sliced almonds gently.
- Transfer the mixture into the prepared baking dish, spreading it evenly. Top with a sprinkling of additional sliced almonds.
- Slide the dish into the preheated oven and bake for 25-30 minutes, or until the edges are golden and the center is slightly set.
- Once baked, let it cool for a few minutes before slicing. Serve warm, optionally drizzled with honey or topped with your favorite yogurt.
Notes
- Feel free to substitute the almond milk with any other milk of your choice.
- For added sweetness, drizzle some honey over the top before serving.
