A delicious and hearty vegetable curry made with potatoes, cauliflower, and spices.

- 2 medium potatoes, peeled and diced
- 1/2 head cauliflower, cut into florets
- 1 medium onion, finely chopped
- 2 tomatoes, pureed
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan over medium heat and add cumin seeds. Let them sizzle.
- Add chopped onions and sauté until golden brown.
- Stir in minced garlic, ginger, and green chili. Cook for a minute until fragrant.
- Pour in the tomato puree and cook until the oil separates.
- Add turmeric, coriander powder, red chili powder, and salt. Mix well.
- Toss in the diced potatoes and cauliflower florets, stirring to coat with spices.
- Cover and cook on low heat for about 20 minutes, stirring occasionally, until vegetables are tender.
- Sprinkle garam masala and mix well.
- Garnish with fresh cilantro and serve hot with naan or rice.
